Currently, with Tempo set as time tracking provider, users need to revert to Jira old issue view, go to the Edit issue screen and edit the remaining estimate there.

Maybe I do not get it correctly, but I am able to set on the new view the Remaining Estimate and it reflects in Tempo view.

This is a real issue when trying to managing what works remaining in sprint.

Atlassian have just announced that from March 31, 2021 the old view vil be removed.
This issue needs to be fixed before that. For us the alternative will be not to use Tempo anymore
